SAFFRON HISTORY

_

In antiquity, crocus was said to be the name of a beautiful youth. Two different myths connected his fate with the aromatic plant from which we obtain saffron. According to one, the god Hermes loved him, but killed him by mistake and where the body’s blood ran into the earth, the first crocus flower sprang up.The other story related that Crocus and a nymph, Smilax, were so in love that they never separate. Yet the gods, tired of watching their courtship, ended it by changing Smilax into a yew-bush, and crocus into a saffron crocus.

SAFFRON is the world’s most valuable spice because of its unique properties and because of all the labor that goes into producing it ( more than 170000 flowers make just one kilogram) and Its name given to the three dried red colored stigmas and part of the white style to which they are attached of crocus sativus Linnaeus, which flowers just once a year.
The main characteristics of saffron are: PICROCROCINE (BITTERNESS), SAFRANAL (FLAVOR), CROCINE (COLOR).
Saffron is the dried stigma (red part of the pistil) of Crocus Sativus Linnaeus.

SAFFRON PROPERTIES

_

Because of its chemical composition saffron has unique qualities and properties. It is a rich source of the B group of vitamins, especially riboflavin. But more important perhaps are its properties of color, aroma and taste. The coloring agent crocin is readily soluble in water and it is this water solubility that makes it preferred to other carotenoids as a colorant for food and medicine.

Effective elements:
The effective elements of saffron are Crocin, Saffronal and Picrocrocin. Novin saffron has always tried to present a product with the highest rate of effective elements in fiber and powder shapes, relying on its expertise and special production facilities as the biggest and best producer and exporter of saffron from origin.

Nutritional value:
Saffron has a variant chemical structure. It consists of carbohydrates, minerals, vitamins, proteins and antioxidants. Saffron is a good source of riboflavin. 140 mg of saffron is as effective as 40 mg of synthesized riboflavin.

Chemical composition of safranal:
safranal is a volatile liquid oil which produces a light yellow spot in water vapor and is readily soluble in ethanol, methanol and petroleum ether.

ORGANIC

_
Ecology, health, care, fairness and justice are the four basic principles of organic farming. In the organic production of saffron, the same as all other organic products, it has to follow the four mentioned principles. Organic saffron producer measure the soil fertility through completely natural inputs and replaces the use of chemical pesticides with suitable agronomic methods. Therefore, in addition to taking care of the soil and ecology of the farm, it will also take care of the final product consumed by the consumer. The new, innovative, and at the same time ecologic and environmental preserver methods which are used by organic saffron producers, will also help the farm community. Soil health, plant health, and finally the health of consumers of organic products are all the issues which a saffron farmer will consider through implementation of organic laws and regulations regarding all stakeholders. In addition to being in a clean environment and not being polluted with chemicals, Farm workers have good living conditions during their stay and work on the farm, and they will be cared regarding the living conditions, such as proper accommodation, fair and non-gender discrimination, especially in male-to-female payments.
